Chicken and Ritz Casserole

2 cups rice (instant cooked)
1 1/2- 2 chicken breasts cooked and cubed
1 can cream of chicken soup
1 pint sour creme
1/4 cube of butter
2 packages of ritz

spray pan and layer with cooked rice. Lay chicken and salt and pepper. Mix soup and sour creme, pour on chicken. Melt butter and add crushed ritz. Top casserole and bake at 350 degrees for 20 minutes. This is the recipe that I loosely follow. I generally mix more soup with less sour creme to my liking and I add the ritz without the butter...Personal preference. Hope you enjoyed!

Chicken Slouvaki Recipe

1 tsp minced onion
2 cloves garlic minced
6 tbsp olive oil
6 tbsp lemon juice
2 tsp salt
1/2 tsp pepper
1 tsp oregano
2-3 lb chicken cut up

put in bag- marinate overnight
skewer- cook on grill (soak sticks in water)
Broil to 165 degrees internal temp for 3-4 minutes

Greek potatoe recipe that is fabulous with this chicken

8 large potatoes peeled and cut
4 cloves garlic minced
1/2 c olive oil
1 c water
1 tbsp oregano (mediterranean)
1-1/2 juices of lemon
salt and pepper generously

Preheat to 440 degrees- put in baking pan
Bake 40 minutes or until golden
(If water goes dry add 1/2 c water and put back in 20-40 minutes.)

Meatballs

Make sure your meatballs are fully thawed. Then you can cook them for 30 min. uncovered. Then cut into one of the meatballs in the middle of the tin. If not warmed through continue to cook for 15 more minutes. Then cut into a meatball again. Then cook for another 15 and check them. When making the meatballs from scratch (not freezing) you cook them for 1 hour. If they are cooked that long they will not dry out. It will probably only make the flavors better.

Sorry for the troubles! My mother-in-law has done this many times and has never had a problem.

meatballs

The meatballs in the round tins (made to go over mashed potatoes, rice, or noodles) are really good but need to cook quite a bit longer than instructed. The meatballs were partially cooked before freezing, but the 30 min at 350 doesnt cut it. I raised my temp and my cooking time.

Mexican Chicken Lasagna

Mexican Chicken Lasagna

3/4 cup chopped onion
3 14-ounce cans stewed tomatoes with juice
1/2 cup salsa, medium or mild
1 1 1/4 ounce package taco seasoning
1 16 ounce can black beans, rinsed and drained
1 large egg
16 oz. ricotta cheese
2 tsp. minced garlic (2 cloves)
10 uncooked lasagna noodles
4 boneless, skinless cooked chicken breasts (about 1 lb) cut into 1-inch cubes
1 4 oz can chopped green chilies
1 1/2 cups (about 6 ounces) grated Monterey Jack cheese

To make sauce, combine chopped onion with tomatoes, salsa, and taco seasoning. Stir in beans.

To make ricotta layer, whisk egg in small bowl with a fork. Whisk in ricotta cheese and garlic.

Spread 1 cup tomato sauce mixture over the bottom of a greased 13x9x2 inch casserole dish (should barely cover bottom). Top with 5 (uncooked) noodles, overlapping slightly. Spread on one half of the ricotta cheese mixture. Sprinkle with half the chicken and half the chilies. Spoon 2 cups tomato sauce mixture on top, then add the rest of the ricotta cheese mixture; spread lightly. Sprinkle with half the grated cheese. Top with remaining noodles, chicken, chilies, tomato sauce mixture, and grated cheese. Cover with foil, label and freeze.

To prepare for serving, thaw and preheat over to 350 degrees. Bake uncovered for 40-50 minutes or until noodles are tender when pierced with sharp knife. Cool 10 minutes before serving. Makes 8 servings.


This recipe makes two 8x8 lasagnas. Also can use beef.

Meat ball Recipe!

This is my mother-in-laws famous, and very simple, delicious meat ball recipe.

1 lb. hamburger
1 egg
1 cup oatmeal
1/2 cup dry or fresh chopped onions
1/2 tsp worchestershire steak sause
1 tsp seasoning salt
1/2 tsp lemon pepper

Sauce:
1/2 c. brown sugar
1/4 c vinegar (any kind it just gives it a little different taste for different kinds so use your fav)
1 tsp. mustard
1/4 c bbq sauce (original)
1 tsp. worchestershire steak sause

So that makes 6 of us!

We will be meeting the 2nd Thursday of every month. I posted Tuesday but meant Thursday. I put nine pm because I figured that would be easiest with leaving kids at home but Natalie said that time doesn't work. Does earlier work for everybody? Give some feedback and let me know what everybody thinks. I'm either making bagel pizzas or a garlic chicken on a stick kinda thing...

I'm in for this time. I think I will do a meatball casserole, but not totally sure yet. It is not a sweet and sour meatball.

I would love the recipe for the Sweet N' Sour Chicken from this last time!! Also, I didn't participate the first time but would love the recipe for the Chicken Stir Fry too!

For all those who check the blog we need to know who is in for doing meals for this month for sure by THURSDAY the 1st of April, and what meal you plan on making. If we get more than 10 people to commit than the first to commit are the ones we will go with. So first come, first serve ladies! If you want in, let it be known and we will go from there! Chicken & Ritz Casserole (last month)

2 cups instant rice
1 1/2-2 chicken breasts
1 can cream of chicken soup
1 pint sour cream
1/4 cube butter
2 packs of ritz crackers

Spray pan and spread cooked rice along bottom. Salt and pepper cooked chicken and layer on top of rice. Mix cream of chicken soup and sour creme and pour on top of chicken. (I like to add more soup to the mix to even out the flavor.) Bake at 350 for 20 min. Recipe says to melt 1/4 cube of butter with 2 packages of crumbled ritz and throw it all back in for a few minutes to toast the top but I just skip the butter and throw on the ritz and call it good. Enjoy!

Loaded Chicken Noodle Soup

1 tablespoon butter
1/2 cup onion, chopped
1/2 cup celery, chopped
4 can Chicken broth
1 can vegetable broth
4 boneless, skinless chicken breasts, cooked and cubed
11/2 cups egg noodles
1 cup carrots, sliced
1/2 teaspoon basil, dried
1/2 teaspoon Oregano, dried

Melt butter in large pot over medium heat. Cook onion and celery in butter until tender (about 5 minutes). Pour in broths and stir in chicken, noodles, carrots, basil and oregano. Salt and pepper to taste. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

Chicken Pillows

2 Pkg Crescent rolls (pillsbury are bigger and work better-also I used reduced fat)
2.5 c. cubed cooked chicken
1/2 c. cream cheese (I used half fat free and half regular)
1/2 c. sour cream (I also used half fat free and half regular)
1/4 c. onion (I used less than this but used both white onion and green onions)
1/2 c. celery (I also used a little less than this as per my husband's request)
Italian Flavored Bread crumbs.

Mix all ingredients except bread crumbs(also may add seasoned salt or garlic powder as per preference). Keep 2 triangles of the crescents together and roll out with rolling pin/cup to a larger rectangle or square. Spoon desired mixture onto middle and fold covering all sides. Roll in bread crumbs to coat. (The small ones are made with 1 triangle of crescent rolls instead of 2) Place on cookie sheet or baking dish to freeze before transfering to a freezer bag to prevent getting smashed. Bake at 350 12-15 minutes if fresh/thawed. Bake 350 at 20-30 minutes til lightly brown if frozen.

Shepards Pie

1 lb ground beef/turkey
1 can cream of mushroom
1-2 cans green beans
4 cups mashed potatoes
1 cup cheese

Brown meat add soup place on bottom of pan then layer in green beans, mashed potatoes, and cheese. Bake at 350 for 30 minutes or 1 hours if frozen. Take foil off last 10 minutes to allow cheese to melt.

Chicken Soft Tacos

The recipe for the Chicken Soft Tacos is:
4 frozen chicken breasts
1 can of refried beans
1 (16 oz.) salsa

In a greased crockpot, place frozen chicken breasts. Combine beans and salsa and pour over chicken. Cook 6-8 hours on High or 10-12 on low. Last hour, shred chicken and add 1 cup of sour cream.

Serve in warm tortillas with cheese, sour cream, olives, & lettuce.

From frozen state, you can heat till warm in crockpot or in pan on stove.

Julee's Taco Salad

1 lb ground beef
1 pkg taco seasoning
1 medium onion , chopped
12 oz frozen corn kernels
1 can (15 oz) diced tomatoes
1 regular size bag of thing strip Fritos
Shredded Cheese

Cook ground beef, taco seasoning and onions. Add corn and tomatoes. Freeze in ziplock bag. To Serve: warm up mixture on stovetop. Serve on top of fritos with cheese on top of mixture. Also you can add: lettuce, tomatoes, sliced olives, chopped tomatoes, and sour cream.

Sorry I have been a slacker!

I wasn't so on top of it this time but I promise it will get better. This month is a real busy month at the Evans' household! Anyway, their are 7 of us making meals. We will meet at my house at 4:30 pm on Thursday March, 11....which is today! :) I have come up with one complication and that is that I was called in to work from 3 pm to 7 pm, so matt will be at my house with my meal. I am making a taco salad mix. Well sorry I wont be here but I will already be making plans for next month so it will be better organized! Thanks!

How many people do we have this time?

Ok I know for sure that 5 of us are participating, any others? If that is all that could do it this time, would anyone be interested in doing 2 for each? Just a thought..that would mean making 9 or 10 (depending if you wanted 2 of your own). Maybe some of you have already gone shopping...and that wouldn't work anyway...well give your thoughts anyway! March 11 menu

I think I will be making shepards pie if anyone has any objection let me know.

Breakfast Casserole

1 bag hashbrowns(with/without peppers)
10 eggs
2 cups cheese
1 lbs ground sausage
Salt/Pepper to taste
1 ice cube to prevent from being dry

Brown sausage drain off fat, set aside. Do the same with the hashbrowns. In a bowl add eggs and beat until mixed, add hashbrowns, sausage, and cheese. Place in casserole dish add more cheese on top if desired. Bake at 350 for 30 minutes if thawed or 1 hours if frozen cover to prevent cheese from burning.

Welcome Everyone!

Ok, I thought this would be easier to post our instructions and our recipes rather than email to one person. We can also comment on our favorite meals, or ask questions about cooking times or other things. We will post some dates so that we can keep things organized..we will have a certain date in the month so that you can decide if you are going to participate that month or not, and we will ask you to post what you are planning on making so that we don't have duplicates!! Ok, thanks everyone, it was really nice to have some variety this past month. Everyone will be able to be an author to this blog, where you can post, and comment on each others posts. It will not be a private blog so others will be seeing it, so don't post anything too personal that you wouldn't want the world to know!

Ok so Julee and Cadi have decided that we will be doing our next set of meals this week and exchanging on March 11th. We will exchange at Julee's house. We need everyone to post what they plan on making as soon as possible so we can figure out everyone who will be participating for sure. Thanks!
